LiveWell Recipe Contest Tasting

Marshall College’s wellness program, LiveWell TMC, in association with Dining Services, conducted a recipe contest for LiveWell participants as part of the “Balanced Nutrition Workshop.” The winning recipe, Delectable Carrot Soup, will be featured at OVT on June 3.

This smooth and creamy soup was submitted by Marshall 1st year, Karen Henwood, who loves to try new recipes.
Delectable Carrot Soup
Ingredients:
1 c diced carrots
1 c chopped onion
1 tsp grated fresh ginger
1 Tbsp butter
1 c cubed potatoes
2 c vegetable broth
2 Tbsp chopped fresh dill
1 c heavy cream
salt and pepper to taste
Instructions:
1) Melt butter in a small saucepan and seat the carrots, onion, and ginger in it. Add potatoes and broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
2) Strain liquid into a separate container and set aside.
3) Put the vegetables into a blender with the dill and pour in just enough of the liquid to cover them. Puree until smooth and discard excess broth.
4) Return vegetable puree to pan and stir in heavy cream. Heat but do not boil and then serve.
